Farmers Market Goodies!

The farmers market is getting pretty crowded these days. This past Saturday, we made our weekly trip over to the Charlotte Regional Farmers Market aka the Yorkmont Market. We bought some really good local veggies and pastured meats. Our bounty from the market is listed below.

I definitely need to sit down and do some menu planning for this week.  This weekend was not good for us.  We have already fallen off the bandwagon, so to speak.  I didn’t plan very well for this past weekend.  So, of course, we didn’t eat a good “Real Food” breakfast or lunch for that matter on Saturday.  We did happen to have the Kale Saturday night that we purchased a week ago.  It was absolutely delicious.  Honestly, I could eat kale like this at every meal.  Here’s the recipe.

Sauteed Kale

  • One 1/2 lb. bag of Kale
  • 3 or 4 pieces of uncured organic bacon or smoked pastured bacon
  • 1 clove of garlic – chopped (Optional)

Wash the kale in cold water thoroughly.  Then chop the kale coarsely.  Set the kale aside. Take 3 or 4 pieces of bacon and fry them in a pan until done to your liking.  Take the bacon out and chop up.  Set the bacon aside.  If you want garlic, add the chopped garlic to the frying pan.  Saute the garlic for about a minute, being careful to not let it burn.  Add the kale to the garlic.  Fold in all the kale until it has wilted down.  Now, put the chopped bacon back into the pan and stir the kale and bacon together.  Add salt and pepper to taste.  And that’s it.  You are ready to eat some amazing sauteed kale.  You won’t even believe how good this is for you because it tastes so delicious.

Of course, we forgot to take a picture.  I’ll add a picture when we make it again later this week. I honestly could eat it at every meal.  Yum!
